Are you on diet and craving for chicken? Here are some super easy, delicious chicken recipes that are low on calories and can be cooked in just a few minutes:

1) Chicken with Mushroom Sauce


·       Cornstarch- 2 tsp

·       Fat free milk- ½ cup

·       Boneless chicken breast- 4

·       Olive oil- 1 tbsp

·       Butter- 1 tbsp

·       Fresh sliced mushrooms- 500g

·       Onion sliced- ½

·       Chicken broth- ¼ cup

·       Salt- ½ tsp

·       Pepper- 1/8 tsp


·       In a small bowl, mix cornstarch and milk until smooth

·       With the help of a rolling pin, pound the chicken pieces

·       In a skillet, heat oil over medium heat, cook chicken until it is no longer pink from both sides and remove from the pan

·       Now in the same pan, heat butter over medium-high heat and saute mushrooms, onions until they are tender

·       Now add in chicken broth, salt and pepper and bring it to boil

·       Stir in the cornstarch mixture and add it to pan

·       Bring this to boil, cook and stir for 1-2 minutes

·       Return chicken to pan and heat it thoroughly

·       Serve

2) Lemon Chicken Kebabs


·       Lemon juice- ¼ cup

·       Olive oil- 4 tbsp

·       White wine- 3 tbsp

·       Red pepper flakes- 1-1/2 tsp

·       Fresh rosemary- 1 tsp

·       Chicken breasts boneless

·       Lemons- 2


·       In a large bowl, add lemon juice, olive oil, wine, pepper flakes, rosemary and chicken and turn the chicken on both sides to coat it in well with the ingredients and refrigerate for 3 hours

·       Now discard the marinade and drain chicken

·       Thread chicken onto metal skewers and grill over medium heat for 10-12 minutes until they are no longer pink

·       Squeeze lemon all over the chicken and drizzle some olive oil

·       Serve hot

3) Garlic Chicken with Herbs


·       Boneless skinless chicken thighs-6

·       Salt- ½ tsp

·       Pepper- ¼ tsp

·       Olive oil- 1 tbsp

·       Garlic cloves- 10

·       Chicken stock- 2 tbsp

·       Brandy- 2 tbsp

·       Dried rosemary- ¼ tsp

·       Dried thyme- 1/8 tsp


·       Sprinkle some salt and pepper on chicken

·       In a large skillet, heat oil and roast chicken from both sides until brown

·       Remove the chicken from pan

·       Now add garlic cloves and brandy to the skillet and cook it over medium heat for 1-2 minutes

·       Stir in stock, rosemary and thyme and add chicken pieces

·       Bring it to boil

·       Reduce heat and simmer for 6-8 minutes

·       Serve hot

4) Grilled Chicken with Tomatoes


·       Boneless skinless chicken breast- 4

·       Balsamic vinegar- ¾ cup

·       Olive oil- 2 tbsp

·       Fresh basil leaves- a handful

·       Garlic clove minced- 1

·       Salt- ½ tsp

·       Cherry tomatoes- 8


·       In a blender, add vinegar, basil leaves, olive oil, garlic clove and salt and blend. Add tomatoes into the blender and process until well blended

·       Put the rest of the tomatoes for grilling

·       Now in a bowl, combine chicken and 2/3 cup marinade, refrigerate and cover for 1 hour turning occasionally

·       Place chicken on a grilled rack over medium heat and grill chicken for 4-6 minutes from both sides. Grill tomatoes till they are lightly browned

·       Serve chicken and tomatoes with left over marinade
