1) Lemon Garlic Chicken

 

 

 

 

 

 

Ingredients:

2-3 cloves of garlic – crushed
¼ cup- olive oil
1 tbsp- parsley
2 tbsp- lemon juice
4-6 chicken breasts

Directions:

In a bowl, combine and mix all the ingredients
Put this mixture into a ziplock bag in a container in freezer for 1-2 hrs
Now place the frozen chicken in a pressure cooker, and heat it on low flame for 6-8 hr and have it hot.

2) Chicken with soy seasoning and vegetables

 

 

 

 

Ingredients:

4-6 chicken breasts

  1. sliced broccoli
  2. garlic cloves
  3. carrots sliced

1 tbsp olive oil
Black pepper crushed

Soy seasoning:

2 tbsp chopped ginger
1 tbsp soy sauce
1/3 cup cold water
3tsp cornstarch
2 tbsp honey

Directions:

For seasoning, in a pan add all the ingredients mentioned under the seasoning and cook it for 5 minutes on a low flame until the mixture thickens
    In another pan, add olive oil and garlic, once the garlic turns into golden brown, add chicken breats, carrots, broccoli and cook until the chicken becomes tender.
Once the chicken is cooked take the mix on a serving plate and pour the seasoning prepared over it.

3) Assorted Vegetables with Kidney beans

 

 

 

Ingredients:

onion diced-1

  1. tbsp olive oil

2diced bell peppers
diced ginger and garlic- 1
1 ½ tsp cumin
1 tbsp chilli powder
1 tbsp grounded black pepper
1 cup boiled kidney beans
diced tomatoes-3
1 cup frozen corns
Salt to taste

Directions:

In a pan, add olive oil and add diced ginger and garlic, add bell peppers, onions, and tomatoes. Simmer for 3-4 minutes. Now add corns and kidney beans and cumin and chilli powder . Add salt and pepper according to taste and serve hot

Ingredients:

Garlic- 4 diced
Ginger- 1 tbsp diced
Onion-1 diced
Carrots- 4 diced
Beans- diced 1 cup

Olive oil- 3tbsp
Cumin- 1 tbsp
Vegetable broth- 1 cup
Salt to taste
Pepper to taste

Directions

In a pressure cooker, heat olive oil and add cumin and ginger garlic. Add the onions, carrots, beans and cook over medium flame for 3 minutes. Now add lentil and vegetable broth, and add salt and pepper according to taste. Close the lid and cook it over slow flame for 10 minutes. Have it while it’s hot.

5. Pumpkin Soup

Ingredients:
Olive oil- 1 ½ tbsp.
Onion- 1 cup chopped
Garlic- 2 tbsp chopped
Pumpkin- half boiled 2 cup
Vegetable broth – 2 cups
Sugar- 1 tbsp
Salt to taste
Pepper to taste
Coconut milk- 1 ½ cup

Directions
In a pan, add olive oil and onion and garlic. Once golden brown , add pumpkin and vegetable broth and cook for 20 minutes. Add all spices and cover and let it sit.
Now pour the mixture in a blender and blend until smooth
Add the soup in a skillet and add coconut milk to give it a runny consistency. Add salt and pepper according to taste
